Czerw’s Kielbasy

Coming from a Polish family in New Jersey, pierogies have always been a staple at our Xmas eve dinners. My grandparents would buy them from the polish ladies who made them in the church basement, and our meal would also include some kielbasa from the butcher, and home made stuffed cabbage. In a recent year, the church basement had water damage, and the pierogie making equipment was compromised, and we went elsewhere… and they were not the same. I learned that it’s hard to produce a perfect pierogie.
